John Whaite served up tasty lamb nachos with pomegranate on Steph’s Packed Lunch.
The ingredients are: 4 pitta breads, 4tbsp olive oil, 500g lamb mince (20% fat), 2tbsp dried sumac, plus extra to finish, 1tbsp olive oil, 1 small onion, peeled and finely chopped and 1 small aubergine, finely diced.
For the topping: 1 garlic clove, peeled and minced, 2tbsp lemon juice, 4tbsp light tahini and 6tbsp cold water.
To serve: 150g houmous, 150g Greek yoghurt, 2tbsp pomegranate molasses, 100g feta cheese and Pomegranate seeds, to garnish.
