Giuseppe Federici and Marianna Sgarito spaghetti alla melanzane (spaghetti with aubergines) recipe on Saturday Kitchen

Giuseppe Federici and Marianna Sgarito served up a tasty spaghetti alla melanzane (spaghetti with aubergines) on Saturday Kitchen.

The ingredients are: 2 tbsp olive oil, for frying, 2 garlic cloves, sliced, 2 x 400g tins plum tomatoes, ¼ tsp bicarbonate of soda, pinch caster sugar, 3–4 basil leaves, plus extra to garnish, 3 large aubergines, peeled and sliced, 4 tbsp vegetable oil, for frying, 300g spaghetti, salt and freshly ground black pepper.

100g vegan hard cheese, to serve.
