Zena Kamgaing Mojito Chicken with Rice, Pineapple Salsa and Salad recipe on Lorraine

Zena Kamgaing served up a tasty Cuban style Mojito Chicken with Rice, Pineapple Salsa and Salad on Zena’s Summer Kitchen.

The ingredients: 30g bunch fresh mint, leaves only, stems discarded, 4 large garlic cloves, 100ml white rum, 2 limes, zest and juice, 2 tbsp olive oil, 6 chicken legs (thigh and drumstick) and 1 tbsp sugar.

For the pineapple salsa: ½ large pineapple, finely chopped, ½ red onion, finely chopped, 1 red chilli, finely chopped (optional), 1 lime, juiced and 10g fresh mint sprigs, leaves only, very thinly sliced.
