Freddy Forster served up a tasty and healthy vegetable and quinoa curry on Steph’s Packed Lunch.
The ingredients are: ½ onion, peeled and diced, 2 garlic cloves, peeled and crushed, ¼ tsp garam marsala, 1 cinnamon stick, Good pinch of turmeric, 1 green cardamom pod, ¼ tsp ground cumin, 150g butternut squash, peeled and diced, 750ml coconut milk, 100g cauliflower florets, 100g broccoli florets, 100g tin chickpeas, 4tbsp frozen peas, 1 tbsp natural yoghurt and 150g white quinoa.
To serve: 2 tbsp fresh coriander, 1 tbsp toasted sesame seeds and spoonful natural yoghurt.
For the salad: 2 plum tomatoes, 1 Hass avocado, Few leaves of yellow chicory, chopped, 1 tbsp walnuts, roughly chopped, Extra virgin olive oil, Maldon salt and Juice of ½ lemon.
