John Whaite served up a tasty lunchbox frittata with sweet potato, olives and feta cheese on Steph’s Packed Lunch.

The ingredients are: 1 medium sweet potato, peeled and diced, 185g sundried tomatoes, drained weight, chopped, 100g pitted black olives, drained weight, left whole, 200g feta cheese, cubed, Small handful fresh parsley, finely chopped, 2 spring onions, finely sliced, ½ tsp ground oregano and 8 large free-range eggs.
