John Gregory-Smith cheesy courgette quiche recipe on Sunday Brunch

John Gregory-Smith served up a tasty cheesy courgette quiche on Sunday Brunch.

The ingredients are: 1 tbsp butter, 320g packet of shortcrust pastry, 2 tbsp olive oil, 2 courgettes, coarsely grated, 8 spring onions, roughly chopped, 2 large handfuls of finely chopped dill, A large handful of roughly chopped parsley leaves, A large handful of roughly chopped coriander leaves, 300ml double cream, 3 eggs, whisked, 170g grated cheddar, The zest of a lemon, 6g barberries or 20g dried cranberries, A large handful of watercress, Salt and pepper.
