Matt Pritchard Vegan Smoky Black Bean Burrito recipe on Steph’s Packed Lunch

Matt Pritchard served up tasty Vegan Smoky Black Bean Burrito on Steph’s Packed Lunch.

The ingredients are: 1 onion, finely chopped , 1 garlic clove, grated , 1 bell pepper, finely chopped , Splash of olive oil , Tin of sweetcorn, drained , Tin of black beans, drained, 1 tbsp cumin , 1 tbsp smoked paprika , Splash of liquid smoke, Salt and pepper , Splash of chilli sauce.

For the guacamole: 2 avocados , 1 tomato, finely chopped , 1 white onion, finely chopped , Juice of 1 lime , Salt and pepper.

For the tortillas : Mexican rice (ready-made), Iceberg lettuce and Smoked BBQ maple glaze (or hot sauce).

  1. Can I please ask what cheese Matt used…. I know he couldn’t advertise it. Finding a great vegan cheese is so hard.
