Lisa Faulkner one pot rice pudding with ginger biscuits, coconut and mango recipe on Lorraine

Lisa Faulkner served up a delicious tropical one pot rice pudding with ginger biscuits, coconut, stem ginger, pistachios and mango on today’s episode of Lorraine.

The ingredients are: 2 x 400ml tins coconut milk, 80g pudding rice, 1 tsp vanilla bean extract and 4 tbsp soft light brown sugar.

To serve: 6-8 gingernut biscuits, crushed, 1 lime, zested, 4 tbsp pistachio nuts, crushed, 2-3 pieces crystallised ginger, finely chopped and 1 x mango, peeled, stone removed and cut into small cubes.
