Steph Mcgovern served up tasty houmous with flatbread using a recipe by Simon Rimmer on Steph’s Packed Lunch.
The ingredients for the flatbread are: 375g plain flour , 375g natural yoghurt , Heaped 1 tsp baking powder , 1 tsp garlic powder , 1 tbsp chilli flakes and 2 tbsp olive oil.
For the houmous: 400g tinned chickpeas, drained and washed , 2 lemons, zested and juiced , 1 garlic clove, peeled and crushed , 1 tbsp tahini and 125ml extra virgin olive oil.
To serve: 2 tbsp mint, chopped and 100g pomegranate seeds.
