Freddy Forster Asian style salmon burger with coriander salsa recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty Asian style salmon burger with coriander salsa on Steph’s Packed Lunch.

The ingredients are: 2 baked potatoes, 400g fresh salmon, skinless and boneless, 1tsp fresh ginger, peeled and chopped, Pinch cayenne pepper , 1tbsp chives, chopped , 1tbsp coriander, chopped , 4tbsp spring onions, chopped , 1 lemon, zested and juiced , 1 medium free range egg yolk , 2tbsp vegetable oil , 100g plain flour , 2 whole eggs, well beaten and 100g panko breadcrumbs.

For the coriander salsa: 2tbsp red onions, peeled and finely chopped , 2 fresh plum tomatoes, cut into small dice, keeping the seeds in , 80ml olive oil , 1tbsp toasted sesame seeds, toasted , 1tbsp soy sauce , 2tbsp spring onions, finely chopped , 2tbsp picked fresh coriander, roughly chopped , 1tsp green chilli, finely diced , 1tbsp yellow pepper, finely chopped and Juice of ½ lime.

To serve: 4 brioche buns, toasted, 1 baby gem lettuce and 4tsp mayonnaise.
