Bikers Fish Cakes with cod, salmon and haddock fillets in parsley sauce recipe

Si and Dave cooks fish cakes with cod, salmon and haddock fillets in parsley sauce on their Best of British foods series.

The Bikers say: “This recipe uses cod, salmon and haddock fillets, but you could use any fish you like to make these easy fish cakes, coated in breadcrumbs and served with a classic parsley sauce.”

The ingredients are: 600g medium potatoes, flaked sea salt and freshly ground black pepper,250g thick cod fillet, unskinned, 250g thick salmon fillet, unskinned, 100g smoked haddock fillet, unskinned, 500ml whole milk, 1 bay leaf, ½ well-scrubbed lemon, finely grated zest, 6 spring onions, trimmed and finely sliced, 25g plain flour, for dusting, 2 large free-range eggs, 100g fresh white breadcrumbs, 75ml sunflower oil and lemon wedges, for serving.
