Adria Wu served up a tasty curry with a conscience on Sunday Brunch.
The ingredients are: 300g sprouted fava and moong beans, 1 medium red onion, 4 cm piece (30g) ginger, grated, skin on, 1 tbsp, 4 garlic cloves, finely diced, 2 tbsp olive oil, 1/2 tsp mustard seeds, 1 tsp cumin seeds, 12 curry leaves, 200g chopped plum tomatoes, 2 tsp garam masala, 1/2 tsp turmeric powder, 1/2 tsp flaked sea salt, 15g fresh basil stems and 2 tsp desiccated coconut.
The dressing are: 10g red onion, 35g fresh basil leaves, 200g greek style coconut yoghurt, sea salt and black pepper to taste, 1 whole broccoli, florets, peels and stalk, 2 tbsp olive oil, sea salt and black pepper to taste.
