Simon Rimmer Tenderstem Broccoli Tacos with Avocados, Orange and Corn recipe on Sunday Brunch

Simon Rimmer served up tasty Tenderstem Broccoli Tacos with Avocados, Orange and Corn on Sunday Brunch.

The ingredients are: 24 pieces tenderstem broccoli, blanched, 125g smoked chipotle paste, 1 tablespoon cumin, 50g butter, 12 x 100mm soft corn tacos, 4 x avocados, Juice and zest 2 limes, 2 tablespoons yoghurt, Onions, 2 x thinly sliced red onions, Juice 1 lime, Juice 2 oranges, 1 tablespoons dried oregano, 1 tablespoons fine sea salt and 4 black peppercorns.

Garnish with crunchy corn and lime and coriander.
