Freddy Forster served up a tasty chicken supreme with mushrooms and broccoli on Steph’s Packed Lunch.
The ingredients are: 2 chicken breasts, no skin and slightly flattened, 50g plain flour, seasoned with salt and pepper, 2tbsp vegetable oil, 50g unsalted butter, 100g red onion, peeled and diced, 300g button mushrooms, chopped, 100ml white wine, 200ml chicken stock, not salty, 300ml whipping cream, 2tsp wholegrain mustard, 300g medium red potatoes, diced, cooked in boiling salted water for 6 minutes till just cooked and 2tbsp chives, chopped.
For the broccoli: 1 small head broccoli, broken into florets, 20g unsalted butter and 1tsp fresh red chilli, finely chopped.
