Lisa Faulkner served up tasty one pot chicken tacos with guacamole and sour cream using a slow cooker on Lorraine.
The ingredients are: 2 tbsp olive oil, 6 skinless and boneless chicken thighs, scored with a sharp knife, 1 onion, peeled and finely sliced, 1 clove garlic, finely grated or crushed, 1 heaped tsp sweet smoked paprika (or hot smoked paprika depending on whether you want a kick), 100ml barbecue sauce, 1 tsp balsamic vinegar, 400g tin chopped tomatoes, 1-2 tsp chipotle paste, Salt and pepper.
For the guacamole: 1 x avocado, skin and stone removed and roughly chopped, 2 spring onions, finely chopped, Squeeze lime juice, Salt and Small handful fresh coriander, chopped.
To serve: 1 lime, juiced, Small handful of coriander leaves, chopped, 12 taco shells, 100g grated cheese, 100g sour cream and Sliced jalapeno peppers (optional).
