Simon Rimmer served up crispy pork belly with apple and creamy cabbage on Sunday Brunch.
The ingredients are: 1kg pork belly, 50ml olive oil, 2 teaspoons sea salt, Twist black pepper, 1 teaspoon crushed fennel seeds, ½ Head white cabbage, shredded, 2 sliced apples, skin on, 100ml cider, 250ml double cream, 1 tablespoon grain mustard and 1 teaspoon crushed fennel seeds.
