Simon Rimmer and Steph Magovan served up a tasty chicken curry with rice on Steph’s Packed Lunch.
The ingredients are: 1 onion, peeled and chopped, 3 cloves garlic, peeled and chopped, 50mm piece ginger, peeled and chopped, 50ml vegetable oil, 1tbsp ground cumin, 1tsp fennel seeds, crushed, 1tsp cinnamon, 2tsp chilli flakes, 2tsp garam masala, 400g tin chopped tomatoes, 250ml chicken stock and 10 boneless, skinless chicken thighs, cut into 3-4 pieces.
To serve: Steamed basmati rice, 2tbsp coriander, chopped, 1 lime, wedges and 1 red and 1 green chilli, sliced.
