Bikers Duck a l’orange (roast duck with orange) recipe on Best of British foods

Si and Dave makes a sixties classic dish on their Best of British food series. They serve up duck a l’orange or roast duck with orange to most of us.

The Bikers says: “Okay you probably can’t eat this 1960s dish without a heap of irony, but there’s a reason this retro-regarded recipe is a classic. It’s delish.”

The ingredients are: ½ large orange, 1.8kg whole ready-to-roast duck, 2 tsp flaked sea salt, plus extra to season, 2 bay leaves, ½ onion, cut into four wedges and freshly ground black pepper.

For the sauce: ½ onion, peeled and thinly sliced, 4 tbsp orange liqueur, such as Cointreau, 75ml red wine, 1½ large oranges, freshly squeezed juice only, 3 tbsp orange marmalade and 2 tsp cornflour (if you want a thinner sauce only use 1 tsp).
