Dean Edwards slow cooker lamb shank roast recipe on Steph’s Packed Lunch

Dean Edwards served up tasty slow cooker lamb shank roast with mash and gravy on Steph’s Packed Lunch.

The ingredients are: 4 small lamb shanks, 4tbsp olive oil, 1 medium carrot, peeled and finely diced, 1 onion, peeled and finely diced, 2 stalks celery, finely diced, 1tbsp garlic, peeled and minced, 2tbsp tomato puree, 3 stalks fresh rosemary, 1tbsp mint sauce, 200ml red wine, 100ml chicken stock using 1 stockpot and 1 heaped tbsp plain flour.

To serve: Creamy mashed potato and A side of carrots and broccoli, optional.
