Simon Rimmer served up a tasty smashed avocado benedict on Sunday Brunch.
The ingredients are: 2 bagels, halved and toasted, 2 avocados, Zest and juice 1 lime, 1 teaspoon chilli flakes and 4 eggs, poached.
For the sauce : 150g melted butter, 2 yolks (large eggs), 10ml white wine vinegar and Juice half lemon.
