Simon Rimmer served up delicious pear and almond friands mini cakes on Sunday Brunch.
The ingredients are: 6 egg whites, 185g melted butter, 125g ground almonds, 240g icing sugar, 110g flour, 180g finely chopped, peeled pear and 25g flaked almonds.
Serve with mascarpone cheese.
