Ruby Bhogal served up tasty masala chilli loaded fries on Steph’s Packed Lunch.
The ingredients are: 25kg Maris Piper Potatoes, peeled and cut into chips
For the sauce: 2tbsp olive oil, 2 medium white onions, peeled and sliced, 3tsp garlic paste, 1tsp ginger, peeled and grated, 2tsp sea salt, 2tsp garam masala, 2tsp turmeric, 1 tin chopped tomatoes, 1 ½ tsp tamarind Sauce, 3tbsp Kashmiri chilli sauce, sriracha also works and 3tbsp soy sauce,
For the mint yoghurt: 50g natural yoghurt, 15ml whole milk, 30g mint sauce, 10g coriander, finely chopped and Pinch of salt.
To Finish: Handful of Bombay mix and Handful of fresh coriander, roughly chopped.
