Sandro’s Apple Crumble Muffins with Lemon Icing recipe on Lorraine

Sandro served up delicious Apple Crumble Muffins with Lemon Icing on Lorraine.

The ingredients for the crumble: 100g plain flour, 80g light brown sugar, 1 tbsp caster sugar, 1 tsp mixed spice and 60g unsalted cold butter, diced.

For the muffins: 225g plain flour, 1 tsp bicarbonate of soda, 1 tsp baking powder, 1tsp mixed spice, ½ tsp salt, 120g unsalted butter, 150g light brown sugar, 2 large eggs, 80g full fat natural yogurt, 80ml full fat milk, 1 tsp vanilla bean paste and 2 medium eating apples, peeled, cored and diced.

For the icing: 100g icing sugar and 1 tbsp lemon juice.
