Freddy Forster ultimate club sandwich with aubergine, kimchi and sauerkraut recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty ultimate club sandwich with aubergine, kimchi and sauerkraut on Steph’s Packed Lunch.

The ingredients are: 3tbsp mayonnaise, 1tsp Dijon mustard, 2tsp vegetable oil, 1 small aubergine, thinly sliced, 5 leaves basil, torn into pieces, 2tbsp sauerkraut, 1 onion, peeled and very thinly sliced, ½ clove garlic, peeled and thinly sliced, 2tbsp leeks, finely sliced, Pinch of turmeric, 4 slices of wholemeal seeded bread, 4 thin slices of cooked chicken, 2tbsp kimchi, ½ ripe avocado, peeled and thinly sliced, 4 cherry tomatoes, thinly sliced and 20g Parmesan cheese, grated.
