Rick Stein served up a tasty shakshuka with baked eggs in a spicy tomato sauce on Rick Stein’s Cornwall.
The ingredients are: 2 tbsp olive oil, 1 onion, chopped, 2 garlic cloves, chopped, 1 red pepper, deseeded and chopped, 1 tsp sweet paprika, 1 tsp ground cumin, 2 x 400g tins chopped tomatoes, 1 tsp chilli flakes, 4 free-range eggs, salt and freshly ground black pepper.
To serve: handful fresh coriander, chopped and crunchy bread.
