Simon Rimmer served up a tasty tomato and watermelon salad with smoked tofu on Sunday Brunch.
The ingredients are: 2 x beef tomatoes, 2 tsp fine sea salt, Zest and juice of 1 lemon, 200g smoked tofu, cut into 30mm cubes, 12 pieces of watermelon – peeled (chunks about 50-75mm), 1 tablespoon of sunflower seeds and Handful chopped mint.
For the dressing : 50mm piece ginger, peeled and grated, 1 tsp Aleppo pepper, 250ml extra virgin rapeseed oil, 1 tablespoon Dijon mustard, 30ml cider vinegar and Handful chopped mint.
