James Martin deep fried chicken satay with maple corn recipe on James Martin’s Saturday Morning

James Martin served up tasty deep fried chicken satay with maple corn, cucumber and Chinese leaves on James Martin’s Saturday Morning.

The ingredients are: 6 tbsp crunchy peanut butter, 2 tbsp Shaoxing rice wine vinegar, 2 tbsp light soy sauce, 1 tbsp sugar, 2 tbsp oyster sauce, salt and pepper, 100ml chicken stock, 2 tsp cornflour, 6 chicken thighs, cut into 3, 2 tbsp vegetable oil, for frying, mint, coriander and red onion, to garnish.

For the corn: 2 corn on the cob, removed from core, a few spring onions, a few Chinese leaves, ¼ cucumber, sliced, 50ml maple syrup, 2 limes, juice and zest.
