Miguel Barclay served up a tasty money-saving mushroom stroganoff on Steph’s Packed Lunch.
The ingredients are: 1 mug brown rice (approx. 200g), 2 mugs water, 4 portobello mushrooms, sliced, 4 cloves garlic, sliced, 1 tsp smoked paprika, 300ml single cream, 140g of spinach, Olive oil, Salt & pepper.
