Freddy Forster filo pastry pie with vegetables and halloumi cheese recipe on Steph’s Packed Lunch

Freddy Forster served up a tasty filo pastry pie with vegetables and halloumi cheese filling on Steph’s Packed Lunch.

The ingredients for the pie: 2tbsp vegetable oil, 150g red onion, peeled and diced, 1 clove garlic, peeled and diced, 250g potato, peeled and diced, 200g sweet potato, peeled and diced, 150g button mushrooms, quartered, 100g leeks, diced, 50g plain flour, ¼ of cube of vegetable stock, Dried oregano, Smoked paprika, 30g kale, roughly chopped, 210ml full fat milk, 220g pan fried halloumi cheese, diced, 75g cheddar cheese, grated, 1 lemon, juiced, 2tbsp olive oil, ½ packet of filo pasty, 1tsp of harissa paste, 100g cheddar cheese, grated and 75g unsalted butter, melted.

For the dressing: 150g cherry tomatoes, cut in half, 75ml olive oil, 1tbsp red wine vinegar, Salt/pepper, 2tbsp basil, diced and Pinch of caster sugar.
