Kwoklyn Wan served up a tasty red curry ramen with pork and noodles on Steph’s Packed Lunch.
The ingredients are: 250g pork loin, thinly sliced, 2 nests dried ramen noodles and 2 spring onions, thinly sliced.
For the broth: 400ml can coconut milk, 2 lemongrass stalks, bruised, 2 shallots, sliced, 3 tbsp Thai red curry paste, thumb-sized piece of ginger, peeled and sliced, 1 tbsp tomato purée (paste), 3 garlic cloves, minced, 1 litre (4 cups) water, 1 tbsp chicken powder, 6 makrut lime leaves and 2 tbsp fish sauce (or light soy sauce
if preferred).
