Marie Mitchell pepperpot stew with roti and fried plantain recipe on Sunday Brunch

Marie Mitchell served up a tasty pepperpot stew with roti and fried plantain on Sunday Brunch.

The ingredients for the pork marinade are: 600g diced pork shoulder, ½ tsp white peps, 1 clove garlic, crushed, ½ tsp dried thyme and 1 tsp kosher salt.

For the stew : 1 medium brown onion, diced, 3 garlic cloves, finely chopped, 2 spring onions, thinly sliced, Around 8 sprigs of thyme, 1 tbsp black pepper, 120 ml cassareep, 3 tbsp of rapeseed or sunflower, 1/2 scotch bonnet, deseeded and finely chopped, Cinnamon stick, around 3 inches long, 6 cloves, 2 tsp sugar and 500 ml chicken stock.
