Simon King and Dave Myers served up a tasty aubergine curry with fresh tomatoes and mint on The Hairy Bikers Go Local.
The ingredients are: 3 tbsp rapeseed oil (or vegetable oil), ½ tsp turmeric, ½ tsp cinnamon, ½ tsp ground coriander, 2 large aubergines, cut into bite-sized chunks, salt and freshly ground black pepper.
For the curry: 1 tbsp coconut or rapeseed oil, 1 large onion, finely chopped, 1 tsp mustard seeds, 1 tsp cumin seeds, ½ tsp nigella seeds, ½ tsp fennel seeds, 3 garlic cloves, finely chopped, ½ tsp chilli flakes, ½ tsp turmeric, ½ tsp cinnamon, ½ tsp sweet paprika, 500g fresh tomatoes, chopped (or a 400g tin chopped tomatoes), salt and freshly ground black pepper.
To garnish: fresh mint leaves and fresh green chilli, sliced (optional).
