Ainsley Harriott served up tasty buttermilk peri-peri chicken burger with a zesty coleslaw on Ainsley’s World Cup Flavours.
The ingredients for the Peri-Peri Seasoning are: 2 tsp sweet smoked paprika, plus extra pinch, 2 tsp dried oregano, 1 tsp dried parsley, 1 tsp chilli powder, 1 tsp onion powder, 1 tsp garlic powder, 1 tsp ground coriander, ¼ – ½ tsp cayenne pepper (to taste), zest of ½ lemon or lime, sea salt and freshly ground black pepper.
For the Buttermilk Chicken: 4 large chicken thighs, skinless and boneless, 300ml buttermilk, 100g plain flour and vegetable oil, for deep frying.
For the Zesty Slaw: 4 tbsp mayonnaise, 2 tbsp sour cream, juice and zest of 1 lime, ¼ red cabbage, finely sliced, 1 carrot, grated, ½ red onion, finely sliced and 1 tbsp chopped coriander.
To Serve: 4 good quality burger buns and handful of lettuce leaves.
