Jack Stein served up tasty miso salmon with stir fried noodles on Steph’s Packed Lunch.
The ingredients are: 4 salmon fillets, about 140g each and sunflower oil, for greasing.
For the miso glaze: 2tsp brown miso paste, 2tsp balsamic vinegar, 2tsp soy sauce and 1tsp Spanish smoked paprika.
For the noodles: 200g dried rice noodles (vermicelli), 3tbsp sunflower oil, 3 garlic cloves, peeled and finely grated, 25g ginger, peeled and finely grated, 8 spring onions, sliced, 2 medium red chillies, thinly sliced, 100g beansprouts, 1tbsp fish sauce, Small pack of coriander, chopped and 1 lime.
