Ainsley Harriott served up tasty and easy jerk chicken wings and (dirty/dutty) loaded fries with chilli and cheese on Ainsley’s World Cup Flavours.
The ingredients are: 1.2 kg whole chicken wings and 4 tbsp mayonnaise.
For the Marinade: 2-3 tbsp good quality jerk seasoning (add more/less depending on how spicy you like it), 2 tbsp olive oil, 2 tbsp dark soy sauce, 2 tbsp brown sugar or honey, 1 tbsp of fresh thyme leaves, chopped, 5 cm piece of root ginger, grated, 2 cloves of garlic, minced, ½ tsp allspice (optional), juice of zest ½ orange, sea salt and freshly ground black pepper.
For the Dutty Fries: 600g frozen french fries, 1 tsp Jerk seasoning, 1-2 red chilli, deseeded and sliced into rings, 1 spring onion, sliced, 150g Cheddar cheese, grated, 1 large ripe tomato, deseeded and finely chopped, small handful of coriander, chopped, zest of 1 lime.
