Simon Rimmer served up tasty chicken burritos with rice on Sunday Brunch.
The ingredients are: 2 sliced red onions, 1 crushed garlic clove, 3 red chillies (chopped), 1 tbsp smoked paprika, 1 finely sliced red pepper, 200g cooked long grain rice, 100g cooked black beans, 1 roast chicken (shredded), 50ml hot Mexican sauce (cholula), juice of 2 limes, 8 large soft tortillas wraps, 150g grated mozzarella, r ripe avocados, olive oil, juice 6 limes, 2 red chillies, half red onion (finely chopped) and 3 skinned and chopped tomatoes.
To serve: sour cream, fresh coriander and lime wedges.
