Hairy Bikers Gala picnic pie with quails eggs recipe on Best Of British foods

The Hairy Bikers serves up Gala picnic pie on their Best of British food series.

The Bikers says: “Serve this impressive-looking loaf-shaped pie, studded with quails’ eggs, in slices with salad and pickles. Keep any leftover pie in the fridge to snaffle later.”

The ingredients are: 12 quails’ eggs, 4 pork sausages 200g pork mince, 2 rashers rindless steaky bacon, cut into 1cm pieces, ½ tsp ground ginger, ½ tsp ground mace, freshly ground black pepper and 1 tbsp plain flour, for dusting.

For the pastry: 225g plain flour, ½ tsp freshly ground black pepper, 25g cold butter, cut into cubes, plus extra for greasing the terrine, 75g cold lard, 1 tsp flaked sea salt and 1 medium free-range egg, beaten, to glaze.
