Simon Rimmer served up a tasty tandoori chicken salad on Sunday Brunch.
The ingredients are: 800g cubed chicken breast.
For the marinade: 100ml natural yoghurt, juice 1 lime, 2 cloves garlic, finely grated, 25mm piece ginger, finely grated, 15g ground coriander, 10g ground cumin, 5g ground garam masala, 5g paprika, salt and juice 1 lemon mixed with 100g butter.
For the onion bhaji strings: 1 finely sliced onion, 175g gram flour, Tsp chilli powder, Tsp salt and Approx 125ml water.
For the cucumber salad: 2 cucumbers, Tbs sugar, 2tsp salt, 2tsp chilli flakes, Juice and zest 1 lime and Handful chopped mint.
