James Martin Spelt Soda Bread with Cured Salmon and a Dill and Mustard Mayonnaise recipe on James Martin’s Saturday Morning

James Martin served up a tasty Spelt Soda Bread with Cured Salmon and a Dill and Mustard Mayonnaise on James Martin’s Saturday Morning.

The ingredients are: 300g wholemeal flour, 10g oats, 1 tsp bicarb, 1 tsp caster sugar, 200ml buttermilk and 100ml full fat milk.

For the salmon: 500g fresh salmon, pine board and belly removed, 200g table salt and 200g caster sugar.

For the Mustard Mayonnaise: 3 egg yolks, 200ml veg oil, 1 lemon juiced, 1 tbsp Dijon mustard and 1 small bunch dill.
