Simon Rimmer served up a delicious custard slice cake with vanilla and puff pastry using Gail’s recipe on Sunday Brunch.
The ingredients are: 500g pack puff pastry, 3 tbsp icing sugar, for dusting, plus extra to serve and 500g icing sugar plus water to mix for topping.
For the custard filling: 1 gelatine leaf, 750ml whole milk, 250ml double cream, 1 vanilla pod, halved lengthways, 100g cornflour, 25g custard powder, 3 egg yolks and 140g caster sugar.
