Ken Hom Stir Fried Pork with Spring Onions and Spicy Cucumbers recipe on Sunday Brunch

Ken Hom served up tasty Stir Fried Pork with Spring Onions and Spicy Cucumbers on Sunday Brunch.

The ingredients are: 450 g (1lb) boneless pork fillet, 1 tablespoon Shaoxing rice wine or dry sherry, 1 tablespoon light soy sauce, 2 teaspoons sesame oil, 1 teaspoon cornflour, 8 spring onions, 1 tablespoon groundnut or vegetable oil, 2 teaspoons salt, 1 teaspoon freshly ground black pepper and 1 teaspoon sugar.

For the stir-fried cucumbers : 750 g ​cucumbers (about 1½), 2 teaspoons salt, 1 tablespoon groundnut or vegetable oil, 1½ tablespoons garlic, finely chopped, 2 tablespoons fermented black beans, coarsely chopped, 1 tablespoon​fresh ginger, finely chopped, 2 tablespoons spring onions, finely chopped, 1 tablespoon​chilli bean sauce, 1 teaspoon salt, ½ teaspoon freshly ground black pepper, 2 teaspoons sugar, 120 ml water and 2 teaspoons sesame oil.
