Ken Hom served up tasty Stir Fried Pork with Spring Onions and Spicy Cucumbers on Sunday Brunch.
The ingredients are: 450 g (1lb) boneless pork fillet, 1 tablespoon Shaoxing rice wine or dry sherry, 1 tablespoon light soy sauce, 2 teaspoons sesame oil, 1 teaspoon cornflour, 8 spring onions, 1 tablespoon groundnut or vegetable oil, 2 teaspoons salt, 1 teaspoon freshly ground black pepper and 1 teaspoon sugar.
For the stir-fried cucumbers : 750 g cucumbers (about 1½), 2 teaspoons salt, 1 tablespoon groundnut or vegetable oil, 1½ tablespoons garlic, finely chopped, 2 tablespoons fermented black beans, coarsely chopped, 1 tablespoonfresh ginger, finely chopped, 2 tablespoons spring onions, finely chopped, 1 tablespoonchilli bean sauce, 1 teaspoon salt, ½ teaspoon freshly ground black pepper, 2 teaspoons sugar, 120 ml water and 2 teaspoons sesame oil.
