Gino D’Acampo serves up ossobuco alla milanese – Veal shanks with thyme and white wine -on This morning.
Ossobuco is a Milanese specialty of cross-cut veal shanks braised with vegetables, white wine and broth. It is often garnished with gremolata and traditionally served with risotto alla milanese.
Gino says: “This is an healthy option that only contains – Calories 469, staurated fat 5.7g, sugar 5g and salt 2.9g”.
The ingredients are: 1.5kg veal shanks, 6 pieces approx. 7cm thick, 100g diced pancetta, 5 tablespoons olive oil, 100ml white wine, 600ml hot chicken stock, 1 onion, peeled and finely chopped, 2 large celery sticks, finely chopped, 2 carrots, peeled and finely chopped, 3 cloves garlic, peeled and crushed, 3 sprigs of fresh thyme plus a few more sprigs for decoration, 2 tablespoons tomato puree, plain white flour for dusting, salt and white pepper to taste.
