Simon Rimmer served up tasty prawn, avocado and mango cocktail on Sunday Brunch.
The ingredients: 500g cooked king prawns, peeled, 2 ripe avocados, chopped into small cubes, 1 mango – chopped into small cubes and Half cucumber, chopped into small cubes and deseeded.
For the dressing : 125g mayo, Tbs tomato ketchup, Juice and zest 1 lime, Tsp tabasco, Tsp English mustard, 2tsp sherry and 2tsp Worcestershire sauce.
To serve: 2 little gem lettuce, base removed and shredded and Cayenne to dust.
