Kwoklyn Wan Cantonese chicken thighs with spring onion fried rice recipe on Steph’s Packed Lunch

Kwoklyn Wan served up tasty Cantonese chicken thighs with spring onion fried rice for under a fiver on Steph’s Packed Lunch.

The ingredients are: 1 bunch of spring onions (scallions), 8 skin-on chicken thighs, 2 garlic cloves, thinly sliced, thumb-sized piece of ginger, peeled and cut into thin matchsticks and 2 packets of pre-cooked basmati rice.

From the store cupboard: 3 tbsp vegetable oil, pinch of salt, pinch of white pepper and 1 tbsp light soy sauce.
