Ravinder Bhogal served up tasty Spicy Sichuan Caramel Jersey Royals on Sunday.
The ingredients are: 500g Jersey Royals, 2 tablespoons rapeseed oil, a handful of roasted peanuts, coarsely crushed, 1 tablespoon toasted sesame seeds, 2 spring onions sliced on the diagonal and 1 long red chilli, sliced on the diagonal.
For the sauce: 62g soft brown sugar, 15ml red wine vinegar, 25 ml light soy sauce, 1 tablespoon black Chinese vinegar, 25g chilli bean paste or Gochujang, a thumb of grated ginger, 2 fat cloves garlic, finely chopped and 1 teaspoon Sichuan peppercorns.
