Simon Rimmer served up a delicious watermelon tart on Sunday Brunch.
The ingredients for base are: 225g crushed digestives and 125ml melted butter.
For the filling: 1kg cubed fresh watermelon, Juice 1 lime, 100g sugar, Pinch salt and Enough sheets of gelatin to set 1L liquid.
For the topping: 225ml whipped cream and Tsp vanilla.
Garnish with lime zest and small watermelon cubes.
