Simon Rimmer served up a tasty mozzarella cheese tart with sun-dried tomatoes on Sunday Brunch.
The ingredients are: 250g grated mozzarella, 50g grated parmesan, 12 finely chopped sun-dried tomatoes, 100ml double cream, 1/4 very finely chopped red onion, salt and pepper.
For the pastry: 250g flour, Tsp salt, 125g butter and A little water.
For the dressing: Bunch basil, 2tsp Dijon, 200ml olive oil, Clove garlic, Juice and zest 1 lemon and Salt and pepper.
