Prue Leith lemon and pistachio biscotti recipe on The Great British Bake Off

Prue Leith showcased her lemon and pistachio biscotti biscuits for today’s technical challenge on The Great British Bake Off SU2C.

The celebrities in the tent tasked to make the delicious sweet treats to Pure Leith recipe are: Ben Miller, Katherine Kelly, Motsi Mabuse and Mo Farah.

The ingredients are: 75g caster sugar, finely grated zest of 1 large unwaxed lemon, 125g plain flour, ½ tsp baking powder, 1 tbsp olive oil, 1 large egg, lightly beaten, 7-10 drops pistachio extract, to taste and 75g pistachios, roughly chopped.

To decorate: 100g white chocolate, broken into pieces, green chocolate colouring and yellow chocolate colouring.
