Clodagh Mckenna served up a tasty asparagus mimosa with boiled eggs, pancetta and shallot vinaigrette on This Morning.
The ingredients are: 20 asparagus spears (5 per person) , 1 tbsp olive oil , 2 eggs, hard boiled and 120g pancetta lardons.
For the dressing : 1 tbsp fresh basil, torn , Sea salt and freshly ground black pepper , Juice of one lemon , 1 tablespoon finely chopped shallot, 1 teaspoon Dijon mustard, 1/8 teaspoon black pepper and 80ml extra virgin olive oil.
